Ingredients
3 lb beef chuck cut into thin pieces
1 pack of bacon
2 cup of precooked Pinto Beans
6 Green Onions with Bulbs
5 Yellow Chiles
2 Jalapeños
Cilantro
¼ Large Onion
2 Garlic Cloves
1 tbsp Chicken Bouillon
Salt
Pepper
Onion powder
Garlic powder
Cumin powder
Directions
Step 1
Start by dicing your bacon into bite-size pieces. We’re going to render the fat on medium heat, adding in our six green onion bulbs, and five yellow chiles. Sauté for about 10 minutes or until the bacon is crispy.
Step 2
Once the bacon is crispy, remove from pan and in the same fat, add in your 3 pounds of thinly sliced beef chuck.
Step 3
Season the beef with 1 teaspoon of the following: salt, pepper, onion powder, garlic powder, cumin powder
Step 4
For our sauce we’re going to blend 10 tomatillos, 2 jalapeños, quarter of a large onion, big handful of cilantro, two garlic cloves, one cup of water, 1 tablespoon of chicken bouillon and 1 teaspoon of black pepper. Blend well until you have a smooth sauce.
Step 5
Once the beef is almost fully browned, add in the green sauce and one more cup of water. Bring to a simmer on medium heat and cover for 20 minutes.
Step 6
After 20 minutes, add in the rest of your ingredients. Add 2 cups of pre-cooked pinto beans, Top with more cilantro and green onion.
Step 7
Cover and let simmer on medium low for another 20 minutes
