Directions
Step 1
The first thing you need to do is roast some garlic. Cut a whole head of garlic in half. With the bottom half, put olive oil, and salt on it(on the side you just cut of course). Wrap that in foil and put that in the oven at 380 degrees for 45-60 minutes.
Step 2
When there's 5-7 minutes left. Put a 1/2 of a cup of pistachios on a baking sheet then put that in the oven with the garlic for the last 5-7 minutes.
Step 3
When that's done, put 12 ounces of basil(look at the weight on the container) into a large cup. Make sure there's no stems. Then squeeze all of the roasted garlic in there too, and your cup of roasted pistachios.
Step 4
Add 3/4 cups of a good olive oil. Grab your immersion blender and blend that all up. Make sure everything is completely blended up and combined(add more olive oil if it needs it).
Step 5
When it's all blended. Time to add the cheese. Grate a cup of Parmesan Reggiano and add that to the pesto. Stir that in with a spoon. Add a little Calabrian chili oil to loosen it up and to give it a little kick. Then season with salt and pepper to your liking.
