Ingredients
Chicken Thighs
Canola Oil/Peanut Oil/Vegetable Oil
Flour
Salt
Pepper
Garlic Powder
Smoked Paprika
Buttermilk
Pickle Juice(optional)
Directions
Step 1
First thing you need to do is season the chicken. Season all of your chicken thighs generously with salt, pepper, garlic powder, and smoked paprika.
Step 2
Get a gallon ziploc bag and throw the chicken in that bag. Add enough buttermilk in the bag to cover all of the chicken. Then add a 3 tablespoons of pickle juice also. Add the same seasonings to the bag that you seasoned the chicken with(not too much).
Step 3
Put that in a bowl and then into a fridge to marinate for a MINIMUM of 4 hours! I recommend you let it marinate in the fridge overnight.
Step 4
Once you can't wait any longer, take the chicken out of the fridge. Get a large bowl and add a GENEROUS amount of flour to it.
Step 5
Begin to season the flour very generously with salt, pepper, garlic powder, and smoked paprika.
Step 6
Once that's done, you're going to do the most crucial part of the whole process, so lock in... Pour a 1/4 cup of the buttermilk mixture into the flour. Grab a fork and stir that in until it creates little flour balls(no diddy).
Step 7
Get a large enough pot to fry chicken in. Fill it half way with canola oil/peanut oil/vegetable oil. Get that on the stove and turn the heat to medium heat. Let that come up to heat.
Step 8
Time to start battering your chicken! Grab one thigh out of the bag and let the excess buttermilk drip back into the bag. Put the thigh in the flour and scoop some flour on top of the thigh. Press down hard and make sure the whole thigh is completely covered in flour.
Step 9
Repeat this process and put them on a plate or wire rack if you have one.
Step 10
To check if your oil is ready. Take a pinch of flour and put it in the hot oil. If it starts to bubble and fry immediately, that means your oil is ready.
Step 11
Carefully put 2-3 thighs in the oil. Let those fry for 10-15 minutes or until fully cooked. Stir them around occasionally very carefully.
Step 12
When they're done frying, place the fried chicken onto a wire rack or a paper towel lined plate to cool.
