Ingredients

2 ½ cups of AP Flour

1 tbsp of Baking Powder

1 ½ cups of cheddar and other cheeses of your choice

1 cup of cold butter cubed up

1 cup of Buttermilk

1 egg

2 - 3 strips of Maple Bacon

1 tablespoon of salt

Directions

Step 1

So start off by getting all of your dry ingredients into a large bowl. Add 2 1/2 cups of Flour, 1 tbsp of Baking Powder, and 1 tbsp of Salt. Then mix that all up.

Step 2

When that's done put 2-3 strips of Bacon on a small foil lined sheet pan. Then put that into the oven at 375 for 20-25 min.

Step 3

Set that bowl to the side and get out a small bowl. Crack 1 egg and pour 1 cup of Buttermilk into the bowl. Mix that all up with a whisk and set that to the side

Step 4

Get out 1 stick of COLD Butter(1 Cup) and cube that up. Immediately put that into the dry ingredient bowl and start the crush the butter cubes. You want the butter cubes to look like little pancakes. This will create the flakiness texture in the biscuit.

Step 5

Once that's done, grate enough Sharp Cheddar, Pecorino, and Parmesan Reggiano to equal to 1 1/2 cups. Add that to the dry ingredients and mix that all in.

Step 6

Pull your bacon out of the oven if it's done and give that a rough chop. Add that to the dry mix and mix it in thoroughly.

Step 7

Once everything is thoroughly mixed, add in your wet mix. It's time to get your hands dirty. Start the mix everything together with your hands.

Step 8

The biscuit dough will look kind of dry. That's good, don't worry. I made this recipe with the intention to not add all of the buttermilk. I like to finish it and go by the look of the dough. That will be my indicator that it's done

Step 9

Add about 1/4 of a cup of buttermilk to the mix and finish it off. you should see no dry flour, but the dough shouldn't be too wet.

Step 10

Once that's done, scoop out enough size to match the size of a baseball, but a little bit smaller. Put them on a parchment lined sheet pan about 1.5-2 inches apart from each other.

Step 11

Preheat your oven to 380 degrees. When that's preheated, add the biscuits to the oven, and bake them for 20-25 minutes.

Step 12

Pull them when they're done and top them with honey if you're going to enjoy them right away!
