Ingredients

Pasta

Parmesan Reggiano

Calabrian Chili Oil

Salt

Pepper

Pasta Water

Tools

Directions

Step 1

First thing you want to do is get a small pot of water boiling. Once that comes to a boil, salt the water very generously. You want that shit to be as salty as the fucking ocean.

Step 2

Next, pour your pasta of choice into the water, and stir the pasta so it doesn't stick.(Pour enough pasta into the boiling water for two people or enough for yourself because you're lonely like me.)

Step 3

While the pasta is cooking, get a medium size bowl and grate a little more than a cup of Parmesan Reggiano. Go back to the pasta and stir that again then come back to the bowl and add a table spoon of Calabrian Chili Oil. You can add another tablespoon if you want it to be really spicy.

Step 4

After all of that is added, go back to the boiling pasta, and stir it. Taste pasta to see if it's done. If it's not done, keep stirring it. If it is done, grab a glass cup, and pour a 2 cups of the pasta water into the glass cup. Then strain the pasta and lightly run it under cold water really quick. Keep in mind you don't want your pasta to be cold.

Step 5

Next, dump the pasta into the bowl with the grated parmesan. Grab a spoon and pour a little bit of pasta water into the bowl and stir everything up. Repeat this process until you get a nice creamy Alfredo sauce consistency.

Step 6

Next add salt and pepper. Make sure to taste and adjust to your liking.

Step 7

Plate that shit and enjoy!
