Ingredients

½ .5 lb of Shrimp

whole Milk Mozzarella

Bianco Dinapoli Whole Peeled Tomatoes

Parmesan Reggiano

Baguette

Graza Olive Oil

Salt

Pepper

Garlic Powder

Smoked Paprika

Flour

Panko

Directions

Step 1

Start off by preparing the garlic and shallots for the sauce. Mince half of a large shallot and mince 2-3 garlic cloves.

Step 2

Get a large pan up to heat, then add some Graza Olive Oil and sauté the garlic and shallots. Dump a can of Bianco Dinapoli Whole Peeled tomatoes in there and let it reduce by at least half. Make sure to crush the tomatoes up during the reduction process.

Step 3

Now it's time to start prepping your shrimp. They may come with the shell on, so take that off and devein them if they come with the vein too.

Step 4

Once they're all ready and prepped. Season the shrimp with salt, pepper, smoked paprika, and garlic powder. Measure out each seasoning to a teaspoon and mix that all in.

Step 5

Get a bowl and pour a generous amount of flour and season it with the same seasonings that you used for the shrimp. Measure each seasoning to a full tablespoon. Mix that all in. Get a separate bowl, crack 2 eggs, a quarter cup of water, and whisk that all in. Then get another bowl and put a generous amount of panko in it.

Step 6

Time to bread your shrimp. First start with the flour dredge, put some shrimp in there, and make sure they're completely covered with flour. After, go into the egg wash. Make sure they're completely covered in the egg wash. Then put them into the panko and cover them with the panko. Then put them on a plate and repeat the process with all of the shrimp.

Step 7

Get a medium size pan on the stove and turn the fire/heat to medium high. Put a generous amount of Olive Oil in the pan and shallow fry your shrimp. You should fry them for 1-2 minutes on each side or until they are golden brown and crispy. The key to this dish is to undercook the shrimp, because you're going to put it in the oven on broil. So they will finish cooking in the oven.

Step 8

Remove from the pan onto a wire rack to cool when they are done cooking. When they're all done cooking, get out your baguette, and cut it in half. After you've cut it in half, lightly drizzle Graza Olive Oil all on the inside of the sandwich then lightly toast it on a pan on medium high heat.

Step 9

Turn your oven on broil. When it's up to temp, it's time to start to build your sandwich. Start off by putting a layer of the tomato sauce, then a generous amount of shrimp, then add more sauce on top of the shrimp, then add your whole milk mozzarella, and then add generous amount of Parmesan Reggiano.

Step 10

Once your sandwich is build, put it on the top rack of the oven on broil. Make sure you're watching the sandwich the whole time.

Step 11

Once the cheese is melted and has a nice color, pull it out of the oven, and let it cool down on a plate before you dig in.
