Shrimp
3 Eggs
Black Truffle Chili Crunch
Japanese Panko
Broccolini
Graza Olive Oil
Sushi Rice
1 Garlic Clove
Chives
Soy Sauce

Directions
Step 1
First thing you do, wash your rice until it runs clean and get that on the stove. Get the rice rolling and start to prep your shrimp.(de-vein them, take the shell off, or both.)
Step 2
When all of your shrimp is prepared, salt the shrimp generously. Then get a medium size bowl and crack two eggs into it. Whisk the eggs up until they're all combined. Then get two more bowls and put flour in one and Japanese Panko in the other. Season the flour with salt and pepper generously.
Step 3
First, put the shrimp into the flour, then transfer to the egg wash, and then transfer it to the panko. Make sure they're completely covered in the panko. Transfer them to a plate and get a large pan on the stove. Turn the heat to medium high heat.
Step 4
When it's up to heat, put a very generous amount of olive oil into the pan. You're shallow frying the shrimp, so keep that in mind when you're adding the olive oil. Gently add the shrimp and cook them for 2-4 minutes on each side or until they're crispy.
Step 5
Transfer them to a cooling rack when they're done and get a small pan for the broccolini. Put the pan on the burner and turn the heat to medium high. When it's up to temp, pour 1 1/2 cups of water in the pan and then add your broccolini. Immediately put the cap to the pan on. Let that steam for 5-7 min.
Step 6
When that time is up, remove the water, and add a drizzle of olive oil. Smash 1 clove of garlic and roughly slice that. Throw that garlic in the pan. Sauté the broccolini until it's crispy enough to your liking. Remove the broccolini and put that on a plate.
Step 7
Then fry a egg real quick and thinly slice some chives.
Step 8
Now it's time plate everything, start by putting the rice in the bowl first. Then go in with some shrimp, and add the egg also. Then put some Momofuku Black Truffle Chili Crunch on it and the thinly sliced chives.
Step 9
Finish with soy sauce if you'd like also!
