Ingredients

4 Ground Beef

2 Red Onions

Balsamic Glaze

Directions

Step 1

The first thing you want to do is divide the ground beef into 4 even pieces. Take 1 pound of 80/20 ground beef and divide that into 4 even pieces.

After you've done that, shape them into balls... no diddy. Put them to the side and lets start on your onion bacon jam!

Time to get that bacon going. Get out 4-6 slices of bacon and thinly slice them. Throw all of your sliced bacon into a cold pan/pot. Put that on the stove and turn the heat to medium heat.

Stir that bacon around in the pan almost the whole cooking time to prevent your bacon from not getting fucking crispy and perfect.

Once your bacon is done, remove the bacon, and remove the bacon fat.

Now cut off both ends to a red onion. Then cut both of them in half. Then thinly slice the onion into "half moon slices".

Use the same pot/pan you used for the bacon and get that up to medium low heat. Once it's up to temp, throw a knob of butter in there, along with all of your sliced onions.

Sauté those until they're nice and caramelized. Make sure to salt the onions also. This will draw out all the moisture from the onions + it'll season them too. Turn down the heat if it's too hot.(you're onions are burning)

Once your onions are nice and caramelized, add 2-3 tablespoons of brown sugar. Stir that in. Add 2 tablespoons of champagne vinegar and stir that in. Add in your crispy bacon and mix all of that in.

Add in 2-3 tablespoons of balsamic glaze and mix that all in. Taste it to see if it needs more balsamic glaze/brown sugar/salt and you're done with the bacon jam!

Get out a large sheet of parchment paper and cut it into 4 even squares. They should be 2x-3x the size of your ground beef balls... No Diddy... Put all 4 ground beef balls on their own sheet of parchment paper.

Get a cast iron pan or a stainless steel pan on the stove. Turn on the heat top medium high heat. Let that heat up until the pan is literally smoking.

Add a knob of beef tallow to the pan and make sure it covers the whole pan. Then immediately add your first ground beef ball. Make sure the parchment is on top of the ground beef ball. Grab a medium sized pan, put that on top of the ground beef ball, and SMASH that shit.

After you've smashed it into a smashburger patty. Remove the parchment and immediately season it with salt and pepper. Let it cook for 45-60 more seconds then flip it over. After you've flipped it, immediately put a slice of American cheese or any cheese of your choice! Let that cook for 45-60 more seconds, then transfer it to your donut.

Repeat the same process if you want your burger to be a double!

Step 16

Add the bacon jam onto the top and add whatever sauce you want, close the top. AND ENJOY!!
