Directions
Step 1
Start off by candying the walnuts. Grab 1/2 cup of brown sugar, 1/4 cup of butter, spoonful of honey, and 1/2 cup of water. Add that to a pot and bring that to a boil. Then mix everything in. Once it starts to get thick, add it your walnuts and continue to cook them until they're candied.
Step 2
Remove those and put them on a parchment lined plate/pan.
Step 3
Next peel and devein your shrimp. Season them with salt and pepper then set that to the side. Get out a large bowl and add some egg whites and the shrimp to the bowl. Add in equal parts of panko bread crumbs, AP flour, and cornstarch.
Step 4
Mix that all in until the shrimp are completely covered in the batter. If it's a little dry, add some more egg whites and mix it in.
Step 5
Then it's time to fry the shrimp. I just pan fried them in shallow vegetable oil. Fry then for 2-3 minutes in batches. DO NOT OVERCROWD THE PAN.
Step 6
Time to make the sauce. In a bowl add in 1/4 cups of Japanese mayo, 1 tablespoon of toasted sesame oil, 1 tablespoon of condensed milk, spoonful of honey, and a little lemon juice(optional). Then mix that all in.
Step 7
Get a large pan out and bring that up to temp(medium heat). When it's nice and hot; throw the fried shrimp and candied walnuts in there with the sauce. Get everything covered in that sauceeeee. After that, transfer it to a plate. Top with freshly cut chives.
