This is one of the best and easiest ways to cook a whole lamb rack. The dijon mustard and the chives work so perfectly together with the lamb. It's insane. This dish was 100% inspired by Marco Pierre White!

Directions

Step 1

Start off by trimming off any excess fat and silver skin on the lamb rack. After that, season it generously with salt, pepper, and Herbs de Provence.

Step 2

Pre heat your oven to 400 degrees. While that's preheating, get out a large skillet, and get that RIPPING hot. Once that's ripping hot, put some olive oil in there then go in with the lamb rack. You only want to render the fat and get a nice color/crust on the lamb rack so don't overdo it.

Step 3

Once it has a nice crust and you've rendered out the fat. Transfer it to a wire rack with a tray underneath. Put that into the 400 degree oven for 7-10 minutes. You want the lamb rack to read 135 for a perfect medium rare. So pull it and check it as much as you want. No one wants a overcooked lamb rack.

Step 4

When it's reached 135 degrees. Thinly slice a large bunch of chives. After that's done, grab your dijon mustard and put it all over the lamb rack while it's hot. Grab a cooking brush and evenly coat the whole lamb rack with the dijon mustard. Then cover the whole rack in chives.

Step 5

Slice it up and fucking enjoy that shit. This lamb rack will definitely be one of the best lamb racks you'll ever eat.
