Ingredients

1 Large Chicken Breast

Graza Olive Oil

Panko

Romaine

Baguette

Caesar Dressing

Salt

Pepper

Smoked Paprika

2 Eggs

Flour

Directions

Step 1

Start off by butterflying your chicken breast. You can cut it all the way in half. When that's done, lay down a piece of plastic wrap on a cutting board, then lay down one of your butterflied chicken breast, and lay another piece of plastic wrap on top. Start to beat the chicken with pan or pot. It should be at least half the thickness it was before.

Step 2

After that, time to season the chicken, and then bread the chicken. Season the chicken breasts with salt, pepper, garlic powder, and smoked paprika. After that, get 3 large bowls out. In the first bowl put a generous amount of flour in it. Season that flour generously with salt, pepper, garlic powder, and smoked paprika. Then in the second bowl, crack 2 eggs in it and put a splash of water in it too. Whisk that all up. Then in the third bowl, add a very generous amount of panko.

Step 3

Get a large pan on the stove and bring that up to temp(medium heat). While that's heating up, start to bread your chicken. Flour>egg wash>panko. Cover the whole breast with flour and shake off any excess. Then go into the egg wash, cover the whole breast in the egg wash, and drip off any excess. Then go into the panko and cover the whole breast with the panko.

Step 4

When that pan is up to temp. Add enough Graza Olive Oil to shallow fry the chicken breasts. When that's hot enough, gently add your first chicken breast. Get a spoon and start to baste the hot olive oil on top of the chicken breast while it's cooking. After 2-3 minutes have passed, flip and repeat the same process. Do that one more time and your breast should be fully cooked. Remove your chicken breast from the pan onto a wire rack and immediately salt it.

Step 5

Turn your oven on broil. When it's up to temp, cut a baguette in half and to the size of your liking. Generously drizzle olive oil on the inside of the baguette. Then put that in the oven to get a nice color on the top. Once it has a nice color, it's time to build your salad and sandwich.

Step 6

In a large bowl cut up a whole head of washed romaine lettuce and put that in a bowl along with a generous amount of caesar dressing. Also add a generous amount of grated Parmesan Reggiano. Then mix that up very well.

Step 7

After that's all mixed, grab your toasted baguette. Put down a layer of caesar salad, Then your two chicken breasts. Then add your last layer of caesar salad, and top it off with more caesar dressing and a shit load of grated Parmesan Reggiano. Close the sandwich and wrap her up.

Step 8

Cut that shit in half and enjoy!
