While the Japanese are well-known for the raw fish in their cuisines, not many of us might be aware that the Italians have it too. “Crudo” means raw in Italian, and there are so many different types–salmon, tuna, yellowtail, you name it. These dishes usually feature thinly sliced fish with a vinaigrette consisting of olive oil, lemon juice, capers, and parsley. One of my favorite flavor profiles out there is that of Thai cuisine. I love the use of herbs and citrus, while fish sauce brings the umami, salt, and funk. This salmon crudo is inspired by those flavors. I went with lime and orange as my forms of citrus; parsley, cilantro, and Thai basil as my herbs; and fish sauce instead of salt brings the wow factor. Feel free to use any raw fish of your choosing for this!
