Aji Sauce

½ head iceberg lettuce

1 jalapeño, seeds included

½ cup mayonnaise

½ bunch cilantro

1 lime, juice

2 cup long white rice

4 cloves garlic, minced

2 ½ cup water

1 tsp cumin

3 tbsp olive oil

Make the aji sauce.

Make the fries.

Make rice.

Cut steak into strips, season with salt and pepper. In a wok or big frying pan, add oil and cook meat about a minute a side, remove from heat.

Add onion, cook about 2-3 mins. Then add tomato, cook about 30 seconds.

Add soy sauce, vinegar, stock, cumin. Let reduce about halfway, then add beef and fries. Turn off heat, add green onion and cilantro, mix.

Aji Sauce
Step 1
Combine all components in a blender, and blend till smooth.

Wash and cut potato, soak in water for an hour.

Pat dry, fry once at 280F for 6 minutes, let cool.

Then fry at 350F for 5 mins.

In a saucepan, sautée the garlic in oil 30 seconds, then add rice.
