Ingredients

4 large eggs

1 ¼ cups half and half

2 cups shredded sharp cheddar cheese ( you can use whatever cheese you want here or a mix)

8 slices bacon, cooked and chopped
2 pounds tater tots (about 32 ounces)

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon garlic powder

¼ teaspoon paprika

Directions
Step 1
Preheat and prep: Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
Step 2
Mix the base: In a large bowl, whisk together the eggs and half and half. Stir in 1 cup of the cheese, the bacon, and seasonings (salt, pepper, garlic powder, paprika). Gently fold in 1 pound of the tater tots.
Step 3
Layer it up: Pour the mixture into the prepared baking dish. Sprinkle with the remaining 1 cup of cheese and top with the remaining tater tots.
Step 4
Bake: Bake for 40 minutes covered, 20 minutes uncovered or until the tater tots are golden brown and the casserole is set.
Step 5
Broil for extra crispiness (optional): If desired, sprinkle a little more cheese over the top and broil for 1-2 minutes, or until the cheese is melted and bubbly.

Serve: Let the casserole cool slightly before serving.
