Ingredients

1 ½ lb chicken breasts (not too thick)

2 medium heads of broccoli, chopped

2 handful or of cherry tomatoes

Hefty drizzle of extra virgin olive oil (EVOO) or avocado oil

1 block of feta cheese

Salt

Pepper

Garlic powder

package Quinoa, cooked (follow instructions)
Directions
Step 1
2. In a large baking dish, add the block of feta cheese, chopped broccoli, and cherry tomatoes

Pre heat oven to 400 degrees

3. Place the chicken breasts in the baking dish, nestling them among the vegetables.

4. Drizzle the chicken and vegetables with a generous amount of extra virgin olive oil (EVOO)

5. Season the chicken and vegetables with salt, pepper, and garlic powder to taste.

6. Place the baking dish in the preheated oven and bake for about 30 min

While the chicken is baking,cook the quinoa according to the package instructions

8. Once the chicken is cooked, remove the baking dish from the oven and transfer the chicken to slice or shred

Combine all the ingredients in the baking dish, including the cooked quinoa.

Mix everything together well.

10. Optional: Add some fresh basil leaves for extra flavor and garnish.
