Ingredients
10 - 16 oz container of Cherry or Grape Tomatoes
pinch of Salt
¼ - ½ cup Olive Oil
Basil [optional]

Directions
Step 1
Set oven to 175F degrees
Step 2
Cut tomatoes in half and lay cut side up on a baking sheet (add parchment paper if needed)
Step 3
Sprinkle tomatoes with salt
Step 4
Cook tomatoes for 2 1/2 hrs
Step 5
Take tomatoes out and gently smash down to release the extra juices
Step 6
Cook for another 2 hrs or until completely dried
Step 7
Remove from the oven & let cool
Step 8
Add tomatoes to a glass jar with olive oil, a pinch of salt & basil
Step 9
Refrigerate & enjoy!

Stores for 3 or more weeks in the fridge when fully submerged in oil, in an airtight container
