Ingredients
Pre Soaked Red Beans
1 Celery Stalk
½ Yellow Onion
1 Green Onion
Andouille Sausage
5 cup of Chicken Broth
1 tbsp Olive Oil
Smoked Turkey Meat
1 tbsp of creole seasonings
⅔ bay leaves
1 tbsp Garlic Powder
Directions
Step 1
In a heated pan, add olive oil and allow to heat, add in your andouille sausages and remove from heat once browned.
Step 2
Add in celery, green bell pepper, and onion. Saute until softened and add in your pre soaked beans & mix well.
Step 3
Add 5 Cups of of chicken broth, seasonings, sausages, and your smoked turkey drumsticks.
Step 4
Allow to cook on a low to medium heat for about an hour and half.
Step 5
Remove turkey drumstick, shred, and add meat back to the pot.
Step 6
Smash the beans against the side of the pot, this will give it that thickening texture. (Smash about 40% of the beans, it’s not necessasry to do all of them).
Step 7
Cook for an additional 10 minutes and let cool.
Step 8
Serve with white rice and cornbread!
