4 - 5 Boneless Skinless Chicken Thighs

½ Cucumber (Grated)
2 - 3 Garlic Cloves
1 Large Yellow Onion
Chicken Marinade:
½ tbsp Salt
½ tbsp Pepper
1 ½ tbsp Kinders Greek Blend
½ tbsp Cumin
½ tbsp Paprika
⅓ cup Greek Yogurt
¼ Lemon Juice
¼ Olive Oil
Tzatziki Sauce
½ cup Greek Yogurt
¼ Lemon Juice
¼ Olive Oil
Dill
Grated & Drained Cucumber
Garlic Cloves
Salt

OVEN You will need to remove one of the racks for this recipe, it will allow it to stand tall.
Directions
Step 1
Start by marinating your chicken with salt, pepper, Kinders Greek Blend, Cumin, Olive Oil, Paprika, Lemon Juice, Yogurt. Mix well, cover, set aside for at least 2 hours - 1 day.
Step 2
Slice your LARGE onion into two THICK slices, add in 2 skewers (sharp pointing up)into one of the onions. One on each side and one in the middle.
Step 3
Layer the chicken on the skewers and then top it with the second large piece of the onion. Add a third skewer pointing down to help with stability. Place in oven for 45 minutes, 375.
Step 4
Tzatziki Sauce: Grate your cucumber, after grating, drain the excess water to prevent your sauce from being watery. I just covered the paper towel and squeezed it.
Step 5
Mix grated cucumber, yogurt, garlic, lemon juice, olive oil, dill, and salt/pepper. Taste and adjust to your preferred taste.
Step 6
Remove chicken and allow to rest for 5-10 minutes. Slice and build your gyro.
Step 7
