This is a healthy dinner the whole family will love! And it's super easy to hide some veggies in there as well. My husband said he couldn't even tell the zucchini was in it, other than seeing it a little - and he does NOT like zucchini.

Ingredients

1 ½ lbs ground beef

⅝ cup beef broth (I didn’t measure)

1 packet Onion Lipton Recipe Secrets

4 russet potatoes depending on size

1 tsp Corn Starch

1 ½ cups shredded zucchini

Shredded cheddar cheese

Directions

Step 1

Preheat oven to 350F

Step 2

Peel and slice potatoes about 1/4 inch thick

4 russet potatoes depending on size

Step 3

Stick potatoes in a bowl with cold water so they don’t brown

Step 4

Cook ground beef and drain grease

1 ½ lbs ground beef

Step 5

Add zucchini and cook for a minute or 2

1 ½ cups shredded zucchini

Step 6

Add beef broth, Onion packet, salt and pepper and bring to a simmer

⅝ cup beef broth (I didn’t measure)

1 packet Onion Lipton Recipe Secrets

Step 7

Whisk 1 tsp corn starch with a little more broth and add that to the pan to thicken it a little

Take off heat

Step 9

In a greased casserole dish, line the bottom with a layer of potatoes, cover with 1/3 the beef filling, then some cheese

Shredded cheddar cheese

Step 10

Repeat this process 2 more times, adding a little more cheese on the top layer

Step 11

Cover with foil and bake in oven for 1 hour. Enjoy!
