1 ½ cup Diced Potatoes
1 ½ cup sliced leeks, white and soft green part
2 tbsp Butter
4 cup chicken or vegetable broth
2 tbsp cream
Salt and pepper

Directions
Step 1
Sweat leeks in butter for 2-3 minutes until soft. Add a pinch of salt.

Add potatoes and coat in butter.

Step 3
Add broth and simmer until potatoes are tender
4 cups chicken or vegetable broth
Step 4
Blend with an immersion blender until smooth.
Step 5
Add cream, salt and pepper to taste.
