Roasted Chicken + Garlic Sauce

For me, the Chicken from Las Polleras in Venezuela is the best, that touch of the coals and the garlic sauce make it unique. I marinated my chicken for 24 hours, cooked it on the grill, and brushed it with plenty of garlic sauce. If you don't have a grill, you can also make it in a home oven at 425°F (220°C) for 50 to 65 minutes.

1 Pollo Entero

For the Marinado

1 Pimiento rojo

1 Jalapeño (opcional)

¼ Cebolla Blanca

6 Dientes de Ajo

2 Hojas de Laurel

2 Cdas de Sal Gruesa

2 Cdas de Vinagre

1 Cdta de Paprika (Pimenton en polvo)

1 Taza Agua Caliente

For the Mojo de Ajo

1 Taza de Agua

6 Dientes de Ajo

¼ Cda de Sal

2 Cdas de Vinagre Blanco

1 Cda de Aceite Vegetal

For the Marinade

1 Red Pepper

1 Jalapeno (optional)

¼ White Onion

6 Garlic Cloves

2 Bay Leaves

2 tbsp of Coarse Salt

2 tbsp of Vinegar

1 tsp of Paprika (Powdered Paprika)

1 cup Hot Water

For the Garlic Mojo

1 cup of Water

6 Garlic Cloves

¼ tbsp of Salt

2 tbsp of White Vinegar

1 tbsp of Vegetable Oil

Step 1

Licua todos lo ingredinetes del marinado y colocacalo junto con el pollo entero en una bolsa zip.

1 Pimiento rojo

1 Jalapeño (opcional)

¼ Cebolla Blanca

6 Dientes de Ajo

2 Hojas de Laurel

2 Cdas de Sal Gruesa

2 Cdas de Vinagre

1 Cdta de Paprika (Pimenton en polvo)

1 Taza Agua Caliente

Step 2

Llevalo a la nevera y dejalo marinar de 8 -24 horas.

Step 3

Licua todos los ingredientes del mojo y prepara una brocha para untarlo.

1 Taza de Agua

6 Dientes de Ajo

¼ Cda de Sal

2 Cdas de Vinagre Blanco

1 Cda de Aceite Vegetal

Step 4

Retira el exceso de marinado del pollo, sazona con sal y llevalo a la parrilla o al horno a 450°F (225°C) de 50 a 65 minutos.

Step 5

Moja el pollo con el mojo de ajo de 2-3 veces durante la cocción.

Step 6

Retira del fuego, deja reposar por 5 minutos, corta y moja una vez mas con el mojo de ajo.

1 cup Hot Water

Step 2

Put it in the fridge and let it marinate for 8 -24 hours.

Step 3

Blend all the mojo ingredients and prepare a brush to spread it.

1 cup of Water

6 Garlic Cloves

¼ tbsp of Salt

2 tbsp of White Vinegar

1 tbsp of Vegetable Oil

Step 4

Remove the excess marinade from the chicken, season with salt and take it to the grill or oven at 450°F (225°C) for 50 to 65 minutes.

Step 5

Brush the chicken with the garlic mojo 2-3 times during cooking.

Step 6

Remove from heat, let it rest for 5 minutes, cut and brush once more with the garlic mojo.
