Ingredients
4 boneless, skinless chicken breasts
2 tablespoons olive oil
1 tablespoon smoked paprika
1 teaspoon cayenne pepper (adjust to taste)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon Italian seasoning
1 teaspoon season salt
1 teaspoon cumin
1 teaspoon Cajun seasoning
1 teaspoon red pepper flakes
1 teaspoon ground black pepper
1 teaspoon salt
For the Sauce:
2 tablespoons butter
4 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
½ cup cherry tomatoes,
chopped
5 strings chopped parsley
1 chopped red bell pepper
1 chopped yellow onion
1 teaspoon Maggie seasoning
Directions
Step 1
1. Prepare the Chicken:
Step 1
• In a small bowl, mix together the smoked paprika, cayenne pepper, garlic powder, onion powder, Italian seasoning, season salt, Cajun seasoning, cumin, red pepper chili flakes, olive oil, oregano, black pepper, and salt.
Step 2
• Rub the spice mixture evenly over both sides of each chicken breast.
Step 3
2. Cook the Chicken:
Step 1
• Heat the olive oil in a large skillet over medium-high heat.
Step 2
• Add the chicken breasts to the skillet and cook for about 4-5 minutes on each side, or until the chicken is blackened and cooked through. The internal temperature should reach 165°F (74°C).
Step 3
• Remove the chicken from the skillet and set it aside on a plate.
Step 4
3. Make the Sauce:
Step 1
• In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic, onion, and red bell pepper, cook for 1-2 minutes, until fragrant.
Step 2
• Pour in the chicken broth and Maggie seasoning, bring it to a simmer, scraping up any browned bits from the bottom of the skillet.
Step 3
• Stir in the heavy cream, cherry tomatoes, and parsley. Simmer for about 5 minutes, allowing the sauce to thicken slightly.
Step 4
4. Combine and Serve:
Step 1
• Return the chicken breasts to the skillet, spooning some of the sauce over the top of each piece.
Step 2
• Simmer for an additional 2-3 minutes to allow the chicken to absorb the flavors.
Step 3
• Garnish with fresh basil and serve the chicken with the sauce over pasta, rice, or with a side of vegetables.
